Biographical History

Marion C. Pfund (1897-2000) was an American food scientist.

Marion Caroline Pfund was born on November 16, 1897. She received a Bachelor's of Science from Simmons College in 1919. During her college years, she marched as a suffragette. In 1921, she received a master's degree from Vassar, then a PhD in organic chemistry from Yale in 1928. She was a faculty member at Cornell University from 1928 to 1953. She was particularly renowned for her research on apples, potatoes, and custards. She also participated in establishing a national nutrition standard for bread. From 1953 to 1958, she served as the co-dean of Brigham Young University's College of Family Living, after which she was the chairman of San Jose State University's Department of Home Economics until 1965. She participated in an array of activities in her retirement, and was an active Episcopalian. She died on January 5, 2000.
